Scientists in Canada are working on the world's first beer brewed from cannabis, The Guardian reports. Canada's parliament recently passed a law legalizing the recreational use of the drug nationwide.

The techniques employed to test enzymes and fermentation are not new, but the specific focus is. According to Dooma Wendschuh of Province Brands, the Toronto-based start-up behind the project, most cannabis-derived beers on the Canadian market at present have been brewed from barley and later infused with cannabis oil. “That’s not what we do," says Wendschuh. "Our beer is brewed from the stalks, stem and roots of the cannabis plant."

After various "horrible ... rotten broccoli" taste-test rounds, the flavor was perfected with the help of a chemist. “The flavor is dry, savory, less sweet than a typical beer flavor. The beer hits you very quickly, which is not common for a marijuana edible," notes Wendschuh. The company hopes to create a product that will be roughly equivalent to a single dose of alcohol.

Any alcohol that's produced as an effect of the brewing process is removed, meaning the beer is non-alcoholic. It's also gluten-free. "If I could create an alternative to alcohol, that’s something that would change the world,” Wendschuh says. “[It's] something I’m very passionate about.”
